how do runners like feinberg speedrun coop
like how would i play with others that aren't on my LAN
and realms doesn't work because its 1.17

I use a normal 1.16.1 server.jar file and run it on my computer. here is the link for the download: https://mcversions.net/download/1.16.1 . If you look up how to change worlds on servers its pretty after you do it a couple times. It take about 2 minutes for me to reset a seed when I'm doing it with people. Idk if there is a faster way to do it but this is how I do it. (make sure you have a somewhat fast computer as it can be quite taxing to host a server and play Minecraft.
P.S you will have to port forward your router, which is somewhat difficult. here is the tutorial I watched when I first ran a server: . If you have a Mac, its a little bit different but if you mess around, you will get the same result.
