Hey I have a kind of simple yet fun idea. It’s simple yet interesting in how you would go about it. Basically the idea is that you need to reach the sky limit. You could also make the category be reach the sky limit and the bedrock layer.
Of course you would need some rules, as well as define different things. Like, what is the bedrock layer? Do you just have to reach bedrock or the deepest layer of bedrock possible. Also you should probably make a rule of documenting it by use of F3.
Also if you really wanted to make it exciting , you could make it: reach sky limit, reach bottom layer - go to the nether, reach the upper layer (bedrock) and the bottom most layer.
... if you are really crazy, you could do all of the above, go the sky limit in The End and finish it off by dying in the void ......

I think it's interesting since you have to be really efficient in getting ressources. And it's also interesting in a random seed category since there can be random factors about the map etc.: like spawning at a mountain, finding a dungeon or similar things
We actually ran this as a joke a few months ago. Unfortunately the existance of Savannah Plateau M biomes meant that there are seeds where you just spawn at sky limit.
Also there would still be the challenge of reaching sky limit and bedrock.
(+ Nether floor and ceiling)
(+ End sky limit and the void)
You still have to build a nether portal, get the ingredients for the potion, brew it, climb/mine to the top, and then down to the bottom.
(Also you can grab an enchanted golden apple from a chest which is probably faster and more reliable at least for set seed)
And, if you were going for the end challenge, get the eyes of ender (unless you are using a seed with a portal with 12 eyes already filled in, or are 1 in 1 trillion lucky), go to the stronghold and get into the portal, stack to the build limit probably with the dragon still there (or else you would have to waste time killing it) and then jump in the void.
I personally think this is a fairly difficult and potentially entertaining challenge idea.
I might give this a try - I have lots of time now that my exams are done, and I'd like to try speedrunning Minecraft categories.
