yeah, you can use vanilla minecraft. it would be pretty weird if you could only speedrun a game on a modded version lol.
also the reason your game might be lagging on singleplayer is because since 1.3 java edition runs a server on your computer even in singleplayer. (this is actually why directional damage indicators no longer work) it's most likely a problem with your computer having trouble running a server when mods are active or something.

Of course you can. Vanilla is in fact the best option for runs, assuming your computer can handle it.
