I know I personally used GC controller when on console (i.e. rarely). I believe TGH uses a GC controller. You could look into getting a hori GBP pad, but those are expensive to all heck. ($200 or so?)
Just about all first party consoles are accepted. The only console that is disallowed is SGB1, which runs faster.
Accepted hardware includes (this list may not be completely inclusive): -Gameboy Color -Gameboy Player -Super Gameboy 2 -3DS VC¤ - Gamecube (via Gameboy Interface) (¤3DS VC runs version 1.2, which patched glitches used in the current No S&Q route)
~~As far as I can tell, there is no timing difference between SGB2 and Gameboy Player (and emu, and all of the other hardware listed above). ~~
EDIT: LADX tends to run laggy on certain screens SGB2 (like LA does on all hardwares); Also GBI is on GC, not Wii

It's still fundamentally the same game. I preferred it the older way, with fewer glitches. But I'm the minority on that view.
I'd guess that if you purchased LADX from some online Nintendo shop, it's going to be version 1.2. (I don't own modern consoles, so I don't really know much about online marketplaces). If you're running 1.2, you're going to have problems.
Any% (the ~4 minute long category) SHOULD work with any version if I'm not mistaken.
As far as No S&Q or 100%, there are no "up to date" guides. But if you REALLY wanted to run those categories with the version you have now you have some options for tutorials.

I know that no one really runs this game, but I think this game is well suited to a 100% category. I did a run of it and have a video on my youtube page.

We made a change to the rules about a year ago to end time on the first frame that the game has faded completely to white (exactly 150 frames after you touch the stairs). You'll note that most of the (older) Any% videos have a comment to the effect of "New timing makes this a X:XX" or something of that sort.

Honestly, you just gotta do what will keep you in the game the most. If learning the route and doing runs right away is most fun, do that. If you enjoy getting more and more optimized "fast", do some segment practice. (I am in the latter group).
Whatever you do, you just gotta make sure it works for you; there will be no practice / learning routine that works well for everyone. Good luck with your journey!
[I will say though, don't stress out too much about learning a 'hard trick' too early. Kinda get okay at it, and then move on.]

Yeah, there is a big definition of Out of Bounds, but I like to boil it down to "no screen transitioning from solid objects and no standing on 'ceilings'". That may not be the most accurate way to say it, but probably the most concise.
@Cransoon, here is rules: Any No S+Q/WW/OOB"No WW" means no Wrong Warping using any glitch that sends link to unintended map tiles. Rooster skip is one of those things that just doesn't work when you first start out with it. It's like some weird mystical trick that only works on rare occasions. I don't know, you just spend some time doing it, and eventually you get it down. You'll learn which pixels are good, and which are bad. You'll find your rhythm, and eventually it works.
As for the amount of time, I couldn't tell you how long I practiced it. I CAN say that when I first started, I put a full 8 hour day into it (because I wanted to learn the full run without that being a factor). I don't know, I say as soon as you're somewhere in the range of 75% success is a place where you can really implement it into runs.
HOWEVER, since 100% is a save and quit category, unbuffered is not that big a deal, and you should only put it in if the ~8-10s is something you think you need/want.
