I'm getting into the peaceful any% categories but I'm having trouble with the ender dragon fight. I can't find any good resources or guides on how to do 
it fast, is there a good way to do it that fits into that category and isn't extremely reliant on rng?

This is minecraft, every category is extremely reliant on rng. That one more than most. You can grab a bed or two if you want, which might help a bit.
