Is there a way to find the room triggers for certain levels, I just want to look around whats possible for OOB. Or do I just keep bumping my head on shit in game until I find something?

Just keep in mind that speedruns must be done on a clean version of the game so you need to keep a clean version of the game separate.
Also most "room triggers" are just the triggers around doors which are easily visible from oob with Fullbright on. Triggers like the one used in 2-4 P% oob are a very rare exception and runners have already combed over everything with the mod but if you want to double check for yourself with the mod then feel free.
