All bananzas/bosses
Does this category mean collecting all 777 banana gems and the 223 from the shop?

If you read the category's rules then it says where to get them:
You must get all bananzas along the way and defeat all bosses (not including post-game). This includes the following bosses:
you have to defeat all the bosses as well as collect all the transformations. The reason for this category is because any% skips zebra and freezer layer (except with ostrichless)

Any% split into No Divemash / Restricted / Unrestricted
TL;DR:
Any% will be split into Restricted/No Divemash/Unrestricted, with the No Divemash category banning divemash on All Bosses.
