how can i uninstall everest?
In your celeste folder, there should be an "orig" folder with the original Celeste executable. Just replace it with that. Then when you want to switch back to modded you have to install Everest again. Or you could have 2 folders - one for modded Celeste and one for the original I think.

If you still want to keep everest, you can have two versions of the exe file, one with and one without, that is what I do
