I was gonna do this a challenge run xD. Sounds great, but if you really want to make it a reality I'd recommend you route it, complete a run of it, and then show it to the extensions channel in the speedrun discord. Cause this sounds really fun! (Oh and ppl might be willing to help you route it there)

I think a speedrun where you do all of the shrines in the sky would be cool, since there's only 32 of them in the sky, so the run isn't too long, or short.

wait isn't there a side quest there that's only unlocked after you beat it

This sounds very tedious if you had to make variants of each dish for different effects, like mighty meat skewers or hearty fried wild greens. But if it’s just one variant of each dish that might be fun!
