Counting the time on that level from the first frame on which that level is visible would be the best I think.
I like this idea, who wants to be a mod with me and retime everything?
We had this discussion before and it would be nice, the only issue is what to do with deaths? How does that add onto your time?

Fully agreed! In my opinion it's already very many categories with 8 bikes and each individual pack but that's just the nature of the game.

Update: Runs for unpopular bikes can now be submitted on the category extensions for bike race.
Since I am not the host of this I'm joining
Format: There will be three qualifying rounds followed by one finals round. Each round will be 5 days (120 hours) long.
Qualifying rounds: a sub time will be given for each round which you need to beat to move on to the next round. The sub times will increase in difficulty each round. The Finals can have as many people in it as have qualified.
Finals: The person with the best speedrunning time will win the competition.
Rounds: Round #1: Standard Levels pack Round #2: Advanced Level pack Round #3: Special Levels pack Finals: All Holiday and Thanksgiving packs
Bikes used: Normal, Acro, Ghost, Acrohog.
How to Submit: You must have 1 NON CUT video of you speedrunning the packs. This video must be posted on a platform accessible for anyone with a link, i.e. YouTube, Google Drive, Dropbox etc. For the qualifying rounds the runs can be submitted to the leaderboards.
Any edits or cuts in your video at all causes you to be disqualified. You may signup for this competition in the comments to this thread or pm me. This competition will start on Saturday May 22nd.
Here's a place where you can post your runs of unpopular bikes such as Zombie Bike, Maniac, Blue Angel, Super Bike etc. In short, all the bikes that are not included on the main leaderboard.
