Kirby's Dream Land rewards constant grinding and has tricky execution for thing like curry kill and double hits (I know that means nothing to you currently, but you'll see if take a look at a high level run). Super Mario Land 2 is another option where your imputs have to also battle with in game lag. Good luck finding your game.
Majyūō is a great SNES game that doesn't get a lot of credit (not surprisingly since it didn't get a US port :( ). While we're on the SNES subject, Harvest Moon and Legend of the Mystical Ninja are highly underrated IMO.

I'm with ShikenNuggets here, the decision at the end of the day is with the community of that given game. That said, with Game Boy particularly, I believe Super Game Boy 2 and Game Boy Player offered palette swaps that would assist with vision problems. Since Nintendo offered these palette changes on officially licensed hardware, I think the use of the swaps should be universally accepted on that platform. I'm curious what other systems have color swap options.
