I destroyed my opponent’s bed and they destroyed my bed at almost same time
Since a lot of strats make it impossible to have random colors, the rule is no longer followed.
I timed different sections of the top 3 runs so here were my findings:

Since you were playing on a touch screen, the game was more zoomed in, which may have affected the shot distance. It would not have saved enough time for you to get current WR if this had not happened. It seems like mobile has a slight disadvantage but not by much.
RNG manipulation only works for certain towers and it is an annoying process to do. Every time you mess up you have to restart a save file and the strategy is incredibly inconsistent. Plus, a lot of the most competitive categories are barely effected by it.
Here are some answers to some of your suggestions:
Single Community Level Runs: These already exist and they have existed for a long time. By going to individual levels you can see that levels 37-50 are the community levels numbered in their respective orders.
All Levels (Including Community): This was suggested a long time ago on the Discord server. The mods said that once someone shows proof of a good time on it they would think about adding it to the leaderboards.
All Community Level: If you really want it to become a category go talk about it on the Discord server to the mods.
