Personally I think Any%, "True Ending" (all collectables ending) and 100% (all collectables and color palettes) would be good for categories as a start.

Quite a few top level players play with only the analog stick and most controller players switch from D-pad to analog for feathers. However it is not required and feathers can be done on D-pad. It really just comes down to what you're most comfortable with.
