Like recording on just a text example?
For the full-blown scenarios such as Fully Loaded, it would just be from the point you take control of your character until the time the completion screen appears at the end of the scenario.
A similar idea applies for the simpler jobs in the yard, but instead they start when you click the prompt to begin the task.
If you need a video example, let me know and I'll try to provide something soon-ish.
I suggest we use the in-game timer from the completion screen to time our runs. I think it's more accurate than manually-split RTA is, and should compensate for any lag or slowdown we might encounter during the run. This would make the competition fairer, I believe.

Is it just Koln-Aachen that gets run at the moment? Would it be possible to have a bash at a different route/train?
Could we get more routes added for some diversity, and maybe non-speeding/actual service categories? Would be happy to help with it.
