look at the main leaderboard ils. theres pro class, superstar class, and level 2500 categories for every sport. also perfect archery isnt on the boards for the same reason as perfect bowling. too short and would be optimized too quickly.
Possible addition to the Highest score category: Skydiving. Get as many points as possible on Skydiving. Score placed is in Milliseconds (E.G. 205 pts = 205 milliseconds).

Kinda dumb idea, but in ping pong you could do fastest time to skip the ball in the pool. Could be done in Match or return challenge.
Hey, SRC can be kinda annoying to navigate sometimes. If you go to the page for the base game (Wii Sports Resort, as opposed to Wii Sports Resort Category Extensions) and then click "Levels" at the top, you should be able to find some table tennis categories! I don't think there are any table tennis categories on category extensions just because there's nothing super interesting to do
After proving itself as a fun and competitive category, Some Stamps has been promoted from Pending to Misc Categories ! This means that Some Stamps will permanently remain on the leaderboards. This also means that pending is now empty, so there may be new categories added there in the near future
