New runner needs helps with Real-time-timers

I plan on joining the official speedruns.com and submitting runs soon. Started practicing for whole one-shot runs and I got my in-game-time almost to 2 hours for Solo+ Pro in one run. One thing I'm not sure about is the real time though.

I assume it's pretty irrelevant more or less for New Game+ runs, but when exactly does the timer start and stop?

I'd assume it starts as soon as you leave first inventory screen, and ends after your fire the dual rocket launchers in the last cinematic in the last wesker fight?

Also I am an xbox runner, and the recording I can get is max 5 minutes at a time I know of from what resources xbox allows. Anyone got good resources for how to record full runs and timers for xbox?

One last question. I assume you can play as either Chris or Sheva for NG+ since it's permitted to play as Sheva after you beat the game, but only as Chris for a New Game Run?

If you're unable to stream to Twitch you can hook up an external hard drive to your xbox one and set your videos to save to that location. Once you do that, the Xbox will allow you to record for up to an hour instead of five minutes. Still won't let you speedrun the entire game since it's longer than an hour but you could do individual levels or desperate escape or lost in nightmares using that method.

You could also buy a capture card and just record your gameplay that way.
