I just found a pretty cool shortcut in Mario Kart Stadium, and it's at the start of the track, so it should be pretty easy to find.

At the start of a Time Trial in Mario Kart Stadium, start off as normal, then start drifting and use a mushroom upon seeing the first grass patch with three pipes.

You can do this behind the three pipes, which will have you bump into a wall on the way through, or do it in between where the first pipe lines up with the wall. If you take the first method though, you have to get back on to the road after you pass the pipes or else you'll waste some time, so the second method is the easier choice.
