Are there any games in which the strategy to a fastest time isn't always the same?

I'm kind of confused as to what type of game you're looking for. If it's something similar to Minecraft (which I don't think has a real ending, less you mean killing the dragon), then are you searching for games that don't have a specific goal?
The other games you mentioned ask the player to achieve certain goals so they will have the same map/missions and they may even follow a certain storyline so repetitive playthrough is expected.
Are you looking for games like Roblox or Fortnite?
Any roguelike or game with randomized generation would fit your definition.
