Because the IGT listed for all those times is not the same as the timer at the top at the end of the runs or even after the peaks boss jump as it says in the category rules

It's session time, once you go over the line on any of the track you'll get a screen showing session time for that track and the run so far. It's that time which is used after the boss for peaks/glaciers and each of the individual environments.
