So decided to come back to this game and use the fastest character (Pepe) and despite some bad moments managed to pull this run out. Honestly this is definitely beatable as I had a few mistakes in here and couldn't go much faster on certain tracks due to the lack of grip that the car has but I will definitely take this as my run for this category going forward :)
