The 'drifting' or 'power-sliding' as it's better known as, has nothing to do with hitting the brakes. The best way to power-slide is to snap the front of the wii remote & nunchuk left or right before a sharp turn, then begin boosting as you enter the turn.

Also, I find steering and power-sliding to be easier with 'Sensor Bar Assist' turned off (you can access this feature via the settings on the bottom right of the sports menu).
