Why is freedom not an option? I like to play Subnautica in freedom, and I was upset that freedom mode was not an option.

Freedom mode in a speedrun is 4 clicks and a scroll slower than survival. It is not significant enough to have it's own category. If you ever have trouble with food and water in survival mode, you can just die and your food and water will be reset to manageable values.

It’s that the food and water is too much of a hassle to me, it’s much simpler without it. I will try to beat a survival after I beat my current game (I’m in the lost river so it sho I’ll be soon)

It is pretty simple with food and water in a speedrun, as rubiks said it's just 4 clicks as you eat the food in the lifepod locker, so I don't see your problem.

As Rubiks37 said, if youre finding yourself running out of hunger and thirst due to going a bit slow by not being experinced while first running, dying will reset both these values to a managable state. Dying while far from your lifepod or base to collect resources and do the story is not actually as bad as you may think at first, because the game will always respawn you in the last base you built (as long as you put a hatch on it) meaning you can just simply build an unpowered compartment with a hatch on it, go in and out of the hatch, then die (usually drowning) to respawn back in that exact base with your hunger and thirst reset. Just make sure you deconstruct the hatch after going out, or the game will respawn you there next time you die. Optionally, you could deconstruct the compartment aswell to receive the two titanium you innitialy used to build it before countiniuing your journey.
