what items count towards the 100% catalog? because I know there's a few items that you can't get without an eReader, and I also know that the Dummy doesn't count. can anyone clarify this for me?

It's just the items that appear in the catalog. When you complete a section of the catalog, it adds a star next to the amount of items in that section.
