I am moving into a new house tomorrow and with a 1 Gb Internet plan. Is Wifi exceedingly bad with internet speed and lagging/latency compared to Ethernet at this rate?

Ethernet will always be better than wifi, no matter the internet plan. Ethernet will give you more consistent speeds because you’ll be hard wired in and you won’t deal with any kind of interference that wifi is susceptible to.
