I know buying a second disc wouldn’t give more save files, because the console would consider the two discs to be identical. (Note that no data is burned from the Wii U onto the disc)

What is it specifically? A new game would usually go through the support hub, whereas a new category for an existing game would need to be added by the game’s moderators.
Yes, you can take a break. No, you can’t pause time during the break unless the category rules specifically allow for that.

One option would be to run splits on a separate device. I personally use an app on my iPhone for splits while running the game on PC. Downside is you can’t have the splits on the recording, if that’s something you want.
