Hello there, I was getting ready to start practicing this 4 game category but I needed to clarify something first; does all stories include all paths in Shadow the Hedgehog? I was not fully sure how this would work or what was needed to be considered "done" with shadow for the run. Thank you for your time!

It's just All 10 main Endings and Last Story. Pure Hero, Hero, Neutral, Dark and Pure Dark; all of them with their Good & Bad ending versions, and ending with Last Story. NG+ is allowed for this.
