On quest the load times are longer but on P.C. they are shorter and same thing with psvr2
ik im a year late to this but I think another reason is because of different advantages or disadvantages for aim based minigames (arts and crafts, carousel, log ride, all of fazcade excluding bonnie bowl and DJ music man, first aid, and cold storage) the actual vr systems have an advantage but for point and click minigames (food prep, salon, all of the office minigames, probably glam endos, fizzy faz, breaker room, DJ music man, and bonnie bowl) the flat modes have an advantage. also like the other guy said, load times, different fps, different systems (Oculus, for example, is very prone to lag, and psvr is very prone to bad centering). another advantage for flat mode is the absence of the need of centering, plus the animatronic monitor that can be abused for arts and crafts loft, caurosel, breaker rooms, and ballora gallery
