Yes they could and I think they should. Like for each kind of gamemodes lobby parkour and maybe some in the main lobby like the normal one not the Halloween one.
I think we might not since the parkour is always changing and there are many different ones, some of which will no longer be accessible and some which no longer are, lobby parkour is also not that difficult or interesting as the actual gamemodes
The have a lobby parkour for the hive and people are still trying to beat records for it as of today, on Java and bedrock. I was also one of those people to try and beat the record for the parkour.
I agree with @Tundrabird on this and would like to add that there is a cubecraft parkour speedrun.com page that already exists, maybe make a thread and ask there whether they would add bedrock parkour. :) https://www.speedrun.com/cubecraft_parkour/full_game
