That's honestly a completely valid point, I had not thought much into that side of it truthfully! It would most likely require lots of testing but my initial thoughts are sound-based queues to know where certain items might be. Then again, blindfolded might not be 100% compatible for every ending either. I would most likely want to see one for the Mediocrity Ending, the Insanity Ending, Incompletion, and Completion respectively. I think most of them are going to heavily rely on sound-based function, however, there is also plenty of memorization with the inputs and menus that could definitely be done without visually seeing anything. As for nights with animatronics of course, you will focus on hearing them in the vent which will most likely have you use silent ventilation or something since you will want to hear exactly when and where an animatronic is approaching. Again, i myself have not even begun to test this but the simplest start would be Mediocrity due to the very "mapped-out" method when speedrunning the category.
I have been recently working on different speedruns, with one of the major ones being a Blindfolded speedrun. Because of this, I have realized how much this game could benefit from a new category extension that utilizes the typical blindfold-run format that covers each individual endings as well as a 100% category as well. I also think it could be interesting to add a Jumpscare% similar to what UCN offers on their page. Just some of my personal ideas/recommendations and I'm really happy to be a part of this community and look forward to seeing the responses!
