demos typically have their own leaderboard since a lot can change (and in the case of pragmata, has changed) between versions.
For chef skip, you have to wait to get past him. I usually use his head turning as an indicator on when to go. as far as running past enemies in general, you can still do all the same movement. looking down solves many issues, same as in first person. chunk skip is also possible in third person by using aim to cancel the canned animation, as shown here by dizzysplits.
The only strat I have had to use extra resources for in 3rd person is at the valve handwheel to grab the first battery. after tossing the grenade over the barrier, I've used one shotty ammo each (these aren't necessary in 1st person) on the zombies to the left, then point the camera up and away from the blisterborne while turning the valve.
there are also strats that are simply tighter (or look weird) in 3rd person, such as in the first chainsaw fight. running to the door while aiming right, and getting the requiem shot on both zombies, is a tighter window in third person because you have to run further to see the nurse.
The lineup for the chainsaw stun at the gas station also looks a bit weird.

Generally, the largest problem you will run into on 3rd person is that movement is much more animated, as stated in the other posts here. As an example, if you run in the opposite direction suddenly, the character will pivot. That being said, you can do basically everything in 3rd person that you do in 1st person. Whether that requires extra inputs, extra resources, or adjusting lineups, depends on the scenario. Movement is worse, some strats are tighter, and it's an overall slower way to play. I don't think I'd call it more RNG though, as most everything I do/did in my third person runs, I learned from people playing in first person.

In general it's definitely not faster to fight him, yeah. You can just head straight to Dong Zhuo pretty easily. As an optional objective for a run though it's pretty cool.
I've done runs offline of Chapter 1 and that's about an hour, usually under it. Pretty good starting point. On Thursday, I'm going to run Chapter 1 + 2 to see how long that generally ends up being. I think probably we should focus on who is actually the fastest faction for the full game, and just call that the Any%. But I understand people wanting to have different routes to get through the story so that would probably be alright as well.
