He probably input the dash command before he can grab him. Best done during the enemy's stun phase.

I apologize for the late reply. To be honest, I don't know how to keep dashing without grabbing him. The gameplay in the video is the result of dozens (hundreds?) attempts, and it only worked by chance; most of the time I fail.

Whether this state occurs or not depends on luck, but if it does, it should be the quickest and most reliable way to defeat the boss if you don't make any mistakes. (The boss is probably in a state where it cannot be guarded against.)
