If you want PvZ in its native aspect ratio, go to Settings > Display and set a custom resolution of any multiple of 3:2 (1920×1280 is recommended)

With the current free mobile app being bombarded with ads and locking features like mowers behind a paywall, it's not a great port for speedruns at all. It's preferable to use an APK of the older Android release instead, which was unlisted from Google Play in 2017 and has none of the annoyances.
