I was watching oreo's run and in the second area they're able to jump out of the pink blobs with a lot of speed and I was wondering how to do that

You need to jump as soon as you leave the pink jelly area. A successful jump will give you a speed-boost for some reason.

It is very similar to how you can jump from "Star-Blocks" in Celeste, after dashing through them.
