I think I am ready speedrun Pikmin but I don't know if Wii Mini has any advantages or just part of history that Nintendo release it for the giggles I guess.

the only real differences between different consoles, for the gc version or the wii version and probably also the switch version, are loading times. for gc version, using a wii with a fast disc read speed (usually the black or red wiis) is fastest, and for new play control wii version wiiu vc is fastest. if you dont have the fastest hardware, you should still learn and run the game if you want to, because those sorts of things only matter once you start pushing for really good times. loads arent even a big portion of time in this game anyway so its not that big of a deal starting out.
