all i know that might be somewhat helpful is they generate more often in soulsand valleys, or at least on java. i think that applies to bedrock too.
valleys tend to be very open anyway, so it's easiest to spot in one

Ok so on Java there are 4 quadrants from 430ish blocks out to 0, 0 and in each of those there is a 40% chance of a fortress spawning. Not sure if that applies to bedrock. Also fortresses will always start in Nether waste's or old nether, and maybe crimson forests, but they can stretch into other biomes. So your blaze spawner can be in any biome but the center of the fortress can't be in some of the biomes. There is no real effective way to automatically find a fortress though so good luck looking around in the nether.
