Do I have to record it real time, or if I use the -record param, can I record the demo?

I'm asking because my Laptop isn't super powerful. Recording and streaming at the same time takes up a lot of CPU.

I can do one or the other just fine, but not both at once.

Also seperate question: Does the run have to be 60fps 720p? I can only really record at 30fps 420p.

Hey, you're probably better off asking this question in a game this applies to. A lot of people here may not have the answer you're looking for, and besides, stuff like video quality standards can vary from game to game.

However, I will add that you don't necessarily have to stream the game- you could just record it locally and upload it to youtube if that's an option for you.
