Nobody here holds any authority as to what & what not counts as a speedrun. And it's usually decided among the community of said game to put some rules into place for competetiv reasons. Alas, they also cannot stop you from creating your own Category (if other speedruns with various rules already exist).
Co-op runs are indeed very rare. And i can't think of any games beside Good Job! & Overcooked 2 on switch. Goob jobs discord server can be considered Inactive at this point. While Overcooked will likely stay active for the forseeable future.
Hopefully, both of you find a game to speedrun together with if either of them are not to your liking.

As great as speedrunning communities can sometimes be. There will always be a few who just can't control their ego or behavior. And in turn, scare away people from speedrunning a game they too are passionate about...

Looks like you love 2D platforming games that are more focused on Movement. So I obviously suggest Levelhead - the game I run myself every now and then. But if you're not interested, maybe give Super Meat Boy or Celeste a try.

Okay... you appear to be bothered about the required skills & competition. So let's start with a different Mindset. Whichever game you choose, expect to miserably fail. Expect to not pick up key items. Expect to forget which way to go. Expect to die. Expect to run out of ammonition. But also expect to finish this run. Expect to improvise to save yourself. And learn from your mistakes afterwards.
When it comes to tutorials or guides, don't follow them Kara. Try to figure stuff out on your own first, then optimize your own route. And from here onwards, give yourself a Goal. Once you achieved it. You'll know if you wanna keep learning more about the game to push yourself. Or be satisfied & move on.

Don't know exactly what you meant by "didn't optimize this". Our strats are very different.
