I was just wondering what the differences between the console and PC versions of the game are. I figure there has to be something big for the PC version to have it's own page on this website.

The reason why it's separated is because of a specific glitch exclusive to the PC version called Ultra Glides. Ultra Glides in a nutshell is a use of Triangle Glide off certain inclines which launches you across the stage. Bop boosts are also not possible on the PC version, which in combination with the Ultra Glides, makes the game have some very different routes for most of the stages. There are also various other minor differences regarding AI and what-not. All of those factors sort of accumulate and makes the game feel very different compared to the console versions.

They are effectively different builds of the game. Physics of the games are not the same between the two, which allows for completely different runs/tricks throughout the whole game
