Hi,

I am currently waiting for my speedruns to be approved (or at least looked at) but the moderators for the 2 games haven't been online in 15 days and the other is 2 months. I read it can take up to 3 weeks, which is fine, but I messaged the mods to see if they happen to check my run and no response. Is there another way to get it looked at if mods theoretically never respond? Mainly the one who hasn't logged in in 2 months.

You have to wait for the 21 days to do something. After 21 days, if your runs are still pending, you can request to be a moderator for that game, but only if you meet certai criteria. Read the rules here about moderation request: https://www.speedrun.com/support/learn/site-rules

Your account is less than 30 days old, so that may get your request rejected, mind you.
