I've been looking in to running Trouble in Paradise, and was wondering if the mods here wanted to submit the game. I was going to do it myself, but I figured I should make sure that I have the go-ahead from people who run the original. Thanks!

Sure, go for it! You need to have a full run to submit a game afaik, so decide what kinda run you want it to be (category-wise).

The category that seems likely would either be called just Any%, or All Unblocks or something to that effect. In TiP, you unlock the credits after unblocking all of the Pinatas that can't visit your garden due to obstacles in their way, so I'd say that's a good starting point. Also, TiP has a really handy duplication glitch, which clones a post box. In other words, things like master romancing and coins are going to be really easy to deal with! Not sure if this is in the original, but it's worth mentioning.
