Considering how straight forward this game is, you're probably never going to find a dedicated guide. Your best bet is to either study youtube videos like most of us, and/or join the Hitman Discord server.
There's a dedicated Hitman 2018 channel and there's usually always someone around to help you out with routes/questions/approaches.

Because it's Any%. There's no reason to have arbitrary restrictions.
Casual will most likely get added to the list or we'll just have a definition that covers all three difficulties when it comes to Any% categories.
On that note, running Any% on casual doesn't change anything at all. You still take the same amount of damage and the cameras that normally would be there in pro/master would not affect my route or gameplay whatsoever - in case there was any worry about that. Even if it did, Any% should never have any odd restrictions or rules that deliberately makes the run slower for no reason.

It probably will get added eventually seeing as SA/SO Default is the most ran full game category right now. The current normal SA/SO record also uses default equips, doesn't seem like there's much interest or effort being put into just SA/SO full runs at the moment (which will probably change as well).
No one has really brought it up yet from what I can see which is probably why it hasn't been added yet, people are mostly just grinding IL's right now as the game is still quite new. I definitely agree with you though.

Because there's a million sub categories and people are torn on what to run. Some people like any%, others like SA or SA/SO. There's also not that many people running and the majority of the youtube runners don't really interract with us on SRDC, Discord or even Twitch to some extent.
It will most likely be added as a misc category eventually.
