Nintendont is considered an emulator, which is only valid for the extensions leaderboard. There are a few main leaderboard categories on there for emulator submissions as well.

If you're launching it through the disc channel then no, it counts as console. If you're using nintendont or another loader then it does count as emu

Button mapping via system settings is an official feature, therefore it is allowed for any speedruns that you do on your switch, unless stated otherwise in the game rules. However, I haven't seen any games ban it.

I don't think EB x10 would be good. TP used to have Gorge Void x100 in ext. categories, and recently they got rid of it. This would be worse since the trick is RNG dependent.
