Use only Dolphin. It is the best Wii emulator in terms of playability and a proper framerate.
Emulators for Wii games are noticeable to have inconsistent time loads, whether slow or fast. Because of that, it is up to the speedrun community and its moderators to decide if they should include a different category + some restrictions for runs performed on an emulator or ban emulators.
Games like Wii Sports and Wii Party allow emulators on their leaderboards, but they are hidden by default.

While the OG Edition for the NES port of Donkey Kong can be accessed through a rom and an emulator and cannot be purchased from the Wii Shop Channel, limited edition European Mario 25th anniversary Wiis have this game pre-installed.
Heads up for the people that own that type of Wii and would like to speedrun Donkey Kong OG edition.

Let's say for an example that two moderators moderating the same game hasn't been active for three weeks with one moderator being last active last year. What would happen if my submission hasn't been accepted/rejected for many weeks?

Some games have their consoles from the 6th generation-present won't allow emulators due to emulator issues (game barely works, inaccurate game speed, faster loading times than playing on real hardware). However, games that have their consoles from the 2nd-5th generations would allow emulators as long as you use an accurate emulator due to simple hardware.
