I would definitely consider this as a glitch. By using this exploit you are intentionally causing the game to act in a way that it is not intended to.

this seems to be the same thing as simply removing the villager's profession block and placing it back, which isn't a glitch- although I've just tried both methods in 1.16, and both did the same thing, but neither actually resetted the trades

Duplication glitches was added to the game but that doesn't mean it is not cheating ¯_(ツ)_/¯

With this you are doing something that the game doesn't want you to do if that's not the case then why they put a cool down on it

the difference between dupe glitches and this is that this was an intentional feature designed by the team whereas dupe glitches are design oversights. so i wouldnt consider this a glitch.

How tf bypassing the cool down is something the team made Also I don't think it's necessary cus villagers are more efficient in 1.16

You need 1 round of trading sticks with 4 villagers to get the emeralds you need for enderpearls (as long as you get gold for unlocking the cleric). Making 4 fletching-tables would be faster than setting up this "glitch".
