One must commend the residents of Whoville on their transition to such an acidic environment, but one does wonder how it was accomplished and for what gain. A pineapple has its defenses; its hard shell must prove an imposing barrier for such a diminutive people. And while a pineapple surely defends against the sea, the ocean floor is not a place for the faint of heart. Who live in a pineapple under the sea, but why?
There's a lot of great runs, especially in the GDQ backlog. My favorite record I watched live is probably darbian's 4m 56s 878ms SMB1 run, which ended a month-long campaign wherein he had increased popularity and was facing what at the time seemed an insurmountable barrier. The funniest record I've seen also comes from darbian, although this time a 7m 59s 860ms run of SMB2J. darbian basically manages to accidentally get WR watching an infamous infomercial ("set it and forget it!").
@Laxxus The video you linked is a great watch, but I feel its explanation is incomplete. While any lower percent run generally has more attention drawn to it, and is considered a greater achievement in the battle against the game for lowest percentage, runs aren't directly comparable and thus should be split into subcategories, as @Oreo321 mentioned. Indeed, some viewers may consider certain individual runs from higher percentage categories to be more impressive (although since lower percentage runs tend to require more tricks, I don't think this is too common). Still, new developments shouldn't invalidate older achievements.

Since BotW runs on the Nintendo Switch, the preferred method of recording would be purchasing a HDMI capture card and connecting that to your computer. However, these can be expensive, so I would check with the game's community if you instead just want to point a camera at your screen. (I expect they'll be lenient.)

Funny that you mention Quake Done Quicker, since there was a Quake Done Quick which preceded it (also in 1997). Those segmented speedruns (well, community sum of best runs) definitely helped popularize speedrunning. It's a shame I don't have Omnigamer's book on me right now, it has some historical details.
Memes like this make sense for members of a streamer's community, but don't spread easily to anyone else, especially in a game as wide-reaching as Minecraft is. Category extensions might make some sense if a large part of the community wants a specific meme category, but I have doubts this will be popular enough.
That said, there is an Obtain Items category on Minecraft's Category Extensions leaderboard, so you can still try to request this category or add it to Minecraft's Category Extensions Extensions.
Anything composite will work with a composite capture card, so the GameCube and Wii work. You'll need a splitter if you don't want to play off of what gets sent to your computer.

Your first question is a little confusing so I'm not sure what's happening. That said, LiveSplit works like this: You start and split through a run, and then you make your final split. Your final run time will be displayed. Press the split key again and click through the popups to return to a blank timer and start again.
For your second and third question, what you're looking for is an autosplitter. These are bits of code that work with LiveSplit and relay game data to LiveSplit so LiveSplit knows what happens when. However, these must be coded on a game-by-game basis, so not many games have an autosplitter. I would ask around on your game''s Discord server or forum to see if someone's made one for your game.
I'm also unsure if you're asking how to just get your splits to display Possible Time Save and time deltas (-0.73) but those are components you can add in the Edit Layout menu.
