the only way to have the unpatched version is to have the first version of sonic mania in your console when it first came out and you had to not download any patches for the game or update your console iirc
The cheapest way to record a console without buying anything is with your phone. Now if you want a better video quality and you have a pc that can record and play mania at the same time, then buying the game there might be a better option than looking for a good capture card for your switch
