I'm looking to learn full game all trophy run, but how do i reset the trophy count? If i have to go into the games files what do I delete?

Hello! This game actually has a function for that built in. In the games settings, go to advanced. Afterwards, there is a "reset everything" or something in that taste. That will reset all your progress, so you can start doing runs right after!
