I can see two possible issues regarding restetting of gamma:

You have your game open - you can only change it manually if game is not active, otherwise it will reset back to 1.0

If you are using StandardSetting mod you need to change gamma value in its settings, if its set to 1 the mod will change it back every time you change it, if you set it to change gamma to 5.0 it should work smoothly

Yep, it is stated it the rules "Legacy Fabric Loader is allowed for versions 1.0 through 1.13"

That sounds like issue with StandardSettings, make sure to set them correctly following this: https://github.com/KingContaria/StandardSettings#readme
And when it comes to performance issues, thats hard to answer, if anything try deleting ServerSideRNG, because that is not necessary and can lead to some issues.

By pressing F3 you bring up debug screen with tons of information, like your XYZ coordinates, chunk coordinates you are in, horizontal and vertical rotation, and much more. Using F3 is allowed in RSG speedruns, but some runs are done without it, however it is quite rare nowadays. You can use filter to only show No F3 runs if you want to check them out, the most notable position there would be 13:53 WR by Illumina
You need to stand on the exact same spot, otherwise it wont work - you are standing in the middle of the portal, MagneticMaybe is leaning a bit to the left
Next to the "Submit Run" button there is "View Rules" button, and everything you need to know is stated there. Even tho it is pretty long i recommend reading it all. Besides some obvious rules, like No Cheats Allowed, there are some less obvious ones, like having to show F3 screen during or after the run.
