sadly adding several autoscrollers isnt very skilful
for gamecube:
ntsc is fastest, jp is the same as ntsu except secret safe weighs 85 instead of 40, pal is much slower because the game runs at a lower fps.
for wii: ntsc and pal are equal, jp still has the same disadvantage
for switch: all are equal i think

yes as long as the game is visible with audio
starting from a day 2 file leads to all sorts of complications such as having a map already filled in. it also wouldnt be very different than the main run so i see no reason to add it as a ce. you can do runs from day 2 and not submit btw. nothing is stopping you
glitch already exists (regular run). there is no oob category for all fruits and any%. side stories have very little to no glitches so i see no point there. co op maybe could be added but thats a bit extreme
no oob is basically glitchless and can be found under category extensions
