If I'm understanding you correctly, the answer is no. The category in question is 1 Hero to Level 100, not 100 Levels on 1 Hero. You can not choose which 100 levels to count. Please look at the rules for the category you submit to if you are confused.
I don't use everest, but I've heard people mention having 2 different applications / Celeste.exe's that they boot when they do runs vs casual stuff.

The whole leaderboard has to be sorted by IGT instead of RTA for the remastered stuff. It re-enabled any IGT fields that were used previously but eventually scrapped. I'll take a look through everything again and clear them out, thanks.

I'm not a supermod so I can't add mods. I haven't touched the runs in the queue because one is on console and on yours you're scrolling to click. I mostly took/take care of the level leaderboard where the centurion bosses are, so I'm not fully familiar with what lagadou/delirious wanted to do with with the "X heroes to level X" stuff. To me, it's not an interesting goal to even have for the game, but I still take a look at the runs because that's my job. If they're left, they should still be checking every couple weeks minimum if they want to be an active mod.
It's literally the 2nd game rule, right after the first rule stating that IGT is used instead of RTA.

I am a series moderator, but mostly for the classic Bloons style games, not for the Tower Defense spinoff series. @HePPSxd is the sole supermoderator of the game, and has not been online in a month, nor has active social media contacts on his profile (twitter, discord), and repeatedly takes a few weeks to verify each run that comes through- according to checking some runs. I don't know if there are pending runs for this game.
Gerbungis moderators the BTD2 page, and has a history of running BTD1-3. If needed, I can have him post something in here himself, but I feel compelled to do something because he came to me for help.

I am very hesitant to make time without loads take priority over RTA before we have an accessible tool ready. Even if you would be willing to retime runs, it isn't a solution that would be sustained long-term. Did you try running it on PS2 with Fast Disc Speed enabled?
That's precisely how I had it before.
Before I get into it, it's worth noting that there is currently a column for 652% that is time without loads. The board IS NOT sorted by RTA. That column isn't visible because neither run uses the new SRT loadless plugin on PC. Please check the rules if you missed this somehow.
Since things have changed with the SRT PC release and IGT is no longer the method the community wants to use, I had to change things. I always felt that IGT in SRT did an alright job, but the others in the community disagree and so I respect that. It's the same reason why Crash TWoC uses loadless in the same run as 1-3 being with loads, it's community decisions pulled from them. If you can come up with an accurate and fair timing method for SRT on PC and console, such as a load remover based on visuals, I'd happily allow/require that.

Evidenced by the fact that Narti has 6th and 7th on the boards while having 6th and 8th on his/her profile. Doesn't help that there aren't any other obsoleted runs with this anomaly. 2player leaderboard calculations are typically fine, but it gets tricky when the same runner takes multiple spots on a board, even when it comes to variables your times can be miscalculated on your profile.
There was another user who seems to have gone and disappeared a while back. He removed his runs from the site and youtube, and I think he was responsible for the discord. I'm happy to pass the board along to others who are interested in handling the game. Until then it's just me here and I don't know much about LFoD outside of a glitchless 100% route. I'm sorry I can't be more of help.
For that I guess test around and see which one is least annoying for you. Not sure if you have an adblocker but that might help on some sites.
